1. Look for a Natural Appearance
The color and appearance of the fillet are good indicators of its freshness. Fresh fish fillets should have vibrant, natural colouring. For white fish, the fillet should look pearly and slightly translucent, while for salmon or tuna, the color should be rich and consistent. Avoid fillets with brown edges, dullness, or discoloration, as these are sign the fish is no longer fresh.
2. Check the Texture
Fresh fish fillets should be firm to the touch. When gently pressed, the flesh should bounce back and not leave an indentation. Avoid fillets that feel mushy or slimy, as these are clear signs of degradation. The surface should also appear moist but not overly wet or sticky.

Don’t hesitate to ask the fishmonger about the fillet’s source, delivery date, and storage conditions. Fresh fish often arrives daily, so knowing when it was delivered can help you make an informed decision.
6. Consider Sustainability
Whenever possible, choose fish that is sustainably sourced. Look for certifications such as the Marine Stewardship Council (MSC) label or ask about the origin of the fish to support responsible fishing practices.
By following these guidelines, you can confidently choose fresh fish fillets that will enhance your dishes with their flavour and quality. Freshness not only makes your meal more enjoyable but also ensures better nutrition and safety.
